Super Refreshing Peach Cucumber Salad Showcasing Seasonal Summer Fruits

This Peach Cucumber Salad is so easy and so refreshing.  I have two versions to share.  Unfortunately, I failed to photograph the really colorful version of this salad that I made for church on Sunday.  What the photos lack, I promise, the flavor more than compensates for!  Do try this refreshing Peach Cucumber Salad while the summer fruits are still available.



Basic Peach Cucumber Salad

INGREDIENTS:
  • 2-4 peaches, chopped 
  • 3-4 baby cucumbers, or 1-2 English cucumbers, peeled and sliced
  • Several plum, grape, or cherry tomatoes ~ gold or red, cut in halves or quarters
  • Juice of 1/2 a lemon
  • About 1 Tbsp. each xvoo & balsamic vinegar
  • 2-3 tsp. maple syrup
  • Salt & pepper
Add fruits (peaches, cucumbers and tomatoes) to a large bowl.  Squeeze lemon juice on top.  

In a small jar, combine xvoo, balsamic vinegar and maple syrup.  Close lid on tightly, shake, then pour over salad,  and toss.  Season with a bit of salt and pepper.

Serve Peach Cucumber Salad with grilled steak or chicken breast, and a little honey goat cheese for a delicious summer meal that keeps the heat out of the kitchen.

Cucumbers and tomatoes are technically botanical fruits.  This Peach Cucumber Salad provides a great combination of soft and crunchy textures, sweet and savory flavors and nutrients which pairs perfectly  with lean healthy protein of choice.  

Peaches also provides juiciness, potassium, fructose and glucose, and other nutrients that are all beneficial for health.  The carbohydrate content of adding fruit to the cucumbers and tomatoes also provides balance of energy with the protein and bit of fat from the olive oil.

Peach Cucumber Salad w/ Grilled Chuck Steak & Honey Goat Cheese




Here's how to up the ante:

Peach and Cucumber Salad with Parsley & Feta Cheese

INGREDIENTS:

2-4 peaches
3-4 baby cucumbers, or 1-2 English cucumber, peeled and sliced
Several baby plum, grape or cherry tomatoes, halved or quartered
A good handful of flat Italian parsley, minced
3 scallions, thinly sliced
2-3 ounces feta cheese, cut into small squares
Juice of 1/2-1 lemon
1 Tbsp. each xvoo & balsamic vinegar
2-3 tsp. maple syrup
Tiny dash of salt & pepper

Add fruits (peaches, cucumbers and tomatoes) and rest of ingredients up through the feta cheese to a large bowl.  Squeeze lemon juice on top.  

In a small jar, combine xvoo, balsamic vinegar and maple syrup.  Close lid on tightly, shake, then pour over salad,  and toss.  Season with a tiny dash of salt and pepper.  Less salt is needed because the feta cheese is a little salty.
